Usually I make this dish as a side dish but tonight decided it was hearty enough to eat as a meal in itself. Tonight, I also named it for the first time because usually I call it Ham with Potatoes; Mexican Squash and Corn. Since I cooked this dish in a wok, tonight I christened it: New Mexican Stir Fry.
